Looking for a new snack to pack in your lunch? I was. I made some roasted chickpeas for the first time last night and they are super easy to make and… they’re delicious!
Step 1. Drain and rinse your canned chickpeas.
Step 2. Spread some oil on a baking pan.
Step 3. Lay your chickpeas on the baking pan and roll them around in the oil.
Step 4. Sprinkle with spices. (I used Mrs.Dash Garlic and Herb).
Step 5. Bake in the oven at 375 for 30 to 40 minutes or until crispy.
I’m LOVING Mrs. Dash’s Seasoning. It’s salt free!
So I packed the roasted chickpeas to eat as a snack but I also added them to my quinoa salad for lunch.
What’s in the salad?
- Chopped Cabbage
- Chopped Brussel Sprouts
- Roasted Chickpeas
- Topped with salt and pepper and some freshly squeezed lemon juice
